Oh yeah! We love Italian food too! Nick we will have to bring together an Italian group! However, I love all types of food, just today I had Indian food for lunch and then Sushi and wine for dinner. So you can see that I'm up for trying new foods too. Have you ever watched Anthony Bordaine? He likes to try different foods and drinks, I want his job!!!

I will be watching this blog for sure Nick as I love food! :) Almost all kinds! It will be very interesting to see what recipes appear here.

Here is one I threw together tonight that we enjoyed.

Sheila's Squash Casserole

(This works for raw foodists too if you just watch the oven temp and for how long you "cook" it.)

Use organic veggies/cheese as you wish

3 medium sized yellow squash - OR 1 large and 2 small, etc
1/4 medium red onion
1 small tomato
1/4 C parmesan reggiano cheese (grated)
2-3 oz mild white cheddar cheese
1 T of whatever kind of flour you like (I use rice or coconut flour)
1 T of Sugar in the Raw (or brown sugar might work good too)
2-3 pats of butter (optional)
Olive Oil
Oregano
Other seasoning to taste as you like

Wash all veggies and set aside
Cut squash in slices - you can get fancy and cut at an angle if you like - about 1/4 inch thick
Cut the onion to bite size pieces
Cut the tomato in half, then in slices - these should look nice for the top
Place the onions in the dish first, I use a glass pie dish about 1.5 inches deep
Then layer in the squash and follow with the tomato slices
dab the cheese and butter on top
sprinkle lightly with the flour, then the sugar
add the oregano and other spices - lightly maybe a T or bit more depending on how spicy you like things
follow with the shredded parmesan reggiano
pour small amount of olive oil on top - not to saturate just to add flavor and it will go to the bottom to prevent sticking
Bake at 350 degrees for 20-30 minutes depending on how cooked you want the veggies
This can be adjusted for your own preference
You'll definitely start smelling the aroma as the veggies begin to cook!

Experiment with other veggies etc and see how it turns out.
I started with a recipe I'd found online for a zucchini casserole when I came up with this. I just got creative with it.
